La carne, quella buona davvero

Bisogna essere coraggiosi per definire un tipo simpatico Franco Cazzamali, macellaio in quel di Romanengo nella ripetitiva pianura della provincia di Cremona: sulle carni ha una nasino all'insù da star di Hollywood e per farti diventare suo cliente devi superare, come minimo, un esame. Ma le sue carni sono le migliori d'Italia, almeno per quelle che ho conosciuto. Trattate con cura sartoriale (ho passato un pomeriggio, pagato col raffreddore, a vederlo lavorare nella cella frigorifero...), selezionate con talento maniacale, vendute con consapevolezza al limite della superbia (ma, poi, è tutta timidezza e amore per il lavoro. In fondo è un finto burbero...), sono qualcosa di indescrivibile per profumo, consistenza, sapore, piacevolezza... Anteriore crudo di bovino Piemontese battuto al coltello da far suonare le papille gustative, carni di bovino anziano, 55 mesi da brivido, assaggiate in tutti in modi e ogni volta è una sorpresa, sembra, oserei dire, si sente, il sapore dei pascoli, il profumo del fieno... Poi i piccioni da nido e i ghiotti fegatelli di pollo nutrito con i fichi... Giusto per citare le mie ultime frequentazioni in punta di forchetta. Ogni meraviglia che esce dal banco di Franco Cazzamali merita inchini, riverenze ed entusiasmo. Lui e la sua macelleria dove golosi e ristoratori vanno pellegrini nonostante si trovi in fondo alla Padania, sono la prova che c'è spazio, ancora, per la carne perbene, buona, allevata come si deve. Costa? Beh, se si mangia questa una volta al mese invece della bistecca del supermercato due volte alla settimana, si vive molto meglio e si risparmia anche parecchio.

... E i sensi di colpa che assalgno ogni carnivoro consapevole che abbia buttato giù qualche lettura di Jeremy Rifkin, svaniscono in un boccone. Oplà. La carne, in particolare quella bovina, deve tronare a essere un lusso. Non un lusso per pochi, siamo di sinistra: un lusso per tutti ogni tanto. E le bestie devono poter vivere da bestie: brade, alla macchia, e diventare almeno adulte, prima di diventare cibo lussuoso per noi. mic

Perche' litigare con persone che diventano vegetariane/vegane per motivi etici, di salute, etc.? Detto sinceramente io pure li trovo molto strambi e non condivido le loro idee, soprattutto quelle troppo estreme, tipo che non mangiano il miele perche' le api, che in realta' produco il miele per istinto, verrebbero "sfruttate".
Molti ci fanno sentire degli assassini, ma altri sono estremamente corretti e non rompono.

In questo senso sono molto per il vivi e lascia vivere...del resto non fanno male a nessuno.

Io personalmente mi nutro di carne,cioè mi nutro di cadaveri,e perciò so di essere un assassino,non me ne vanto,ma lo sono.Mangiare carne mi da piacere,e continuerò a farlo,continuerò a mangiare anche l'agnello a Pasqua,ma prima di crepare dovremmo toglierci il velo dagli occhi,e ammettere senza timore e senza ipocrisia,che siamo degli assassini consapevoli.
Sì è vero che un animale dovrebbe vivere allo stato brado,e diventare adulto,poi però ce lo mangiamo dopo un crudele omicidio(pardon soppressione).
Suvvia,a testa alta diciamo:SIAMO ASSASSINI,E ALLORA?
Tutto il resto è ipocrisia.
Poi leggo:

Il problema, Alex, non è nell'uccidere gl animali, ma nella loro qualità della vita prima di essere soppressi. Così come per chi la mangia il nodo non è se mangiare la carne, ma la qualità di quella che si mangia. E non si può avere tanta carne buona, né per pochi né per tanti. O è buona o è tanta. E quindi diventa, in quanto rara, un bene di "lusso". Lusso diffuso, lusso per tutti, almeno in occidente, ma lusso. Roba da mangiare un paio di volte al mese. Più che sufficiente ti direbbe qualsiasi nutrizionista.

Hai ragione, meglio una volta al mese, o anche meno, ma che sia carne così buona che valga la pena esser mangiata e magari accompagnata da un buon bicchiere.
Qui in Toscana, invece, sembrano tutti rincitrulliti: orde di turisti domenicali arrivano solo per mangiare la fiorentina, che di fiorentina ha solo il nome, perchè chissà da dove arriva, basta che abbia l'osso!Escono tronfi e salassati dai ristoranti: pagano conti esorbitanti per quei pezzi di carne da 1kg (e ti giuro che qui la vera fiorentina non si è mai mangiata così grande!!), non sono contenti, ma non lo ammetteranno mai!

Se a un manzo o a un maiale gli tiri una fucilata in testa da tre metri, certo resta una roba cruenta e assassina, ma credo di poter affermare che il manzo o il maiale non abbia la minima idea di che cosa vuol dire. Un istante prima vive, mi verrebbe da dire dignitosamente, la sua vita di manzo o di maiale, che corre, si rotola nell'erba o nel fango, socializza o litiga con gli altri manzi o maiali, tromba con i suoi partner preferiti e passa le notti all'aperto proprio come si addice a un vero manzo o a un vero maiale; un istante dopo non vive più: senza sofferenza fra i due istanti, sostanzialmente coincidenti. L'uccisione c'è eccome, ma non so trovare l'ipocrisia, Alex, se non nel fatto che tutto questo temo che accada di rado, nella realtà, che è sempre un filo oppure assai più "industriale" anche nei migliori allevamenti. Non sono un esperto ma credo che esistano comumque precisi obblighi di legge, che impongono di rivolgersi agli "stabilimenti di mattazione"... (una follia, spesso, ad esempio quando le bestie abitano in alta montagna o su un'isola, a decine di chilometri dallo "stabilimento") . In ogni caso: non trovo affatto incompatibile adoperarsi per la salvaguardia di alcuni basilari diritti degli animali, con il fatto di cibarsi della carne dei loro cadaveri. mic
